Ingredients

Main Ingredients:

⦁ 4 medium onions, finely chopped
⦁ 4 large garlic cloves, peeled and crushed
⦁ 3 tomatoes, peeled, seeded, and diced
⦁ 4 cups chicken stock

⦁ 1 tbsp goose fat
⦁ 1 tbsp flour
⦁ 6 slices French bread, toasted and buttered
⦁ 2 oz Gruyère cheese, grated
⦁ 2 egg yolks 

Seasoning:

⦁ Salt and pepper to taste 

Preparation

1. Prepare the Base: Melt the goose fat in a stockpot over medium heat. Add onions and sauté until soft, about 5 minutes. Sprinkle with flour and stir until lightly browned.

2. Add the Aromatics: Add garlic and 1 cup of boiling water, stirring for 1 minute. Mix in the diced tomatoes, chicken stock, salt, and pepper. Bring to a boil, reduce heat, and simmer for 1 hour.

3. Prepare the Bread: Preheat the oven to 475°F. Butter the toasted bread slices and sprinkle them with Gruyère cheese. Place in the oven for 5 minutes or until the cheese melts.

4. Enrich the Soup: In a small bowl, whisk egg yolks with ½ cup hot soup, then gradually stir this mixture back into the pot. Reduce heat to low and stir until slightly thickened.

5. Serve: Ladle the soup into ovenproof bowls, place a cheesy bread slice in each, and bake at 325°F for 5 minutes. Serve hot, garnished with additional cheese if desired.
